Delicious and easy Ayam Pop with Red Sambal recipe:
1 fresh chicken (about 11/2 kg/3 Ibs), skin removed and discarded, cut into 4 pieces
* 5 tablespoons oil, for frying Shrimp crackers (krupuk), to serve
Red Sambal
* 5 red chilies, sliced 5 to 6 shallots
* 2 tablespoons oil 5 kaffir lime leaves
* 1 medium tomato, cut into wedges
* 1 teaspoon salt
* 1 tablespoon freshly squeezed lemon or lime juice
Sauce
* 2 1 / Z cm (1 in) ginger, peeled and sliced
* 2 cloves garlic, minced
* ˝ teaspoon white pepercorns
* 1 teaspoon salt
* 250 ml (1 cup) water
Easy Ayam Pop with Red Sambal Prep Time recipe:
1. To make the Red Sambal, grind the chilies and shallots to a smooth paste in a mortar or blender. Heat the oil in a wok or skillet over medium heat, stir-fry the paste and lime leaves until fragrant, 3 to 5 minutes. Add the tomato and stir-fry for 2 to 3 more minutes. If the mixture gets too dry, dilute it with some water. Season with the salt and lemon or him juice and remove from heat. Transfer to a serving bowl and set aside.
2.Bring the Sauce ingredients to a boil over high heat in a wok or large saucepan and continue to boil for 5 minutes. Reduce heat to medium, add the chicken, cover and simmer for 20 to 30 minutes. Remove and pat dry the chicken pieces with paper towels.
3.Heat the oil in a wok or skillet and fry the chicken pieces for 2 to 3 minutes on each side, until light brown. Remove and drain on paper towels. Serve hot with shrimp crackers and Red Sambal.
