This Beef Satays (Satai Daging) recipe is easy to put together:
* 1 kg (2 Ibs) beef loin or rump, diced
* 3 tablespoons oil
* 1 to 1 1 / 4 liters (4 to 5 cups) water
* 20 to 25 bamboo skewers
* 3 tablespoons rice flour 1 tablespoon sago or tapioca flour
* 1 tablespoon oil, for grilling Crispy Fried Shallots, to garnish
Marinade
* 1 turmeric leaf
* 4 kaffir lime leaves
* 1 stalk Lemongrass, thick bottom part only, tough outer layers discarded, inner part bruised
* 2 slices asam gelugor (dried garcinia fruit), soaked in warm water to soften
* 2 teaspoons salt

* 1 tablespoon coriander seeds
* 1 / 2 teaspoon cumin
* 1 teaspoon freshly ground black pepper 8 red chilies, sliced
* 3 to 4 shallots
* 2 to 3 doves garlic
* 21/ 2 cm (1 in) galangal root, peeled and sliced
* 2 1 / 2 cm (1 in) turmeric, peeled and sliced
* 2 1 / 2 cm (1 in) ginger, peeled and sliced
