This recipe will cover a 20 or 23cm round or square cake or 12 cupcakes. To fill and ice a 2-layer cake, double the recipe and the amounts in the variations, if used.
60g butter or margarine, softened
2 cups icing sugar, sifted
1 ½ to 2 tablespoons milk
½ teaspoon vanilla essence

In a mixing bowl, cream the butter with a large spoon or an electric mixer at medium speed until light and fluffy. Gradually beat in about half the sugar until well blended. Beat in the milk and vanilla. Gradually beat in the remaining sugar. If necessary, add a few drops more milk to make the icing more spreadable.
Tip: Try one of these variations:
Chocolate Icing. Blend 2 melted squares(60g) unsweetened chocolate into the butter or ¼ cup sifted cocoa into the sugar. Mocha Icing. Stir 2 tablespoons sifted cocoa and 1 ½ teaspoons instant coffee powder into the icing sugar. Cherry Cream Icing. Mix in 2 tablespoons chopped glace cherries. Nut Icing. Mix in 1/4 4 cup chopped hazelnuts or walnuts. Pineapple Icing. Mix in ½ cup well-drained crushed pineapple.
Almond Icing. Mix in ¼ teaspoon almond essence. Banana Icing. Mix in ½ cup mashed ripe banana. Coconut Icing. Mix in ½ cup desiccated coconut or ¼ cup each desiccated coconut and well-drained crushed pineapple.
Orange Icing. Omit the milk and vanilla, and add the grated rind of ½ orange and 2 tablespoons orange juice. Lemon Icing. Omit the milk and vanilla, and add the grated rind of ½ lemon and 2 tablespoons lemon juice.
