Wonderfully rich and creamy, this icing never has any lumps. The recipe will cover a 20 or 23cm round or square cake or 12 cupcakes. To fill and ice a 2-layer cake, double the recipe.
In a mixing bowl, beat the cream cheese, butter and vanilla with a large spoon or an electric mixer at medium speed until smooth. Gradually beat in the sugar until well blended.
