Easy, authentic Green Noodle and Pimiento Salad recipe:
Use the time while the noodles are cooking to chop the onions, celery, and pimiento and to slice the radishes.
250g green noodles
1/3 cup chopped shallots
3 radishes, thinly sliced
2 stalks celery, chopped
125g pimientos, chopped
2 tablespoons lemon juice
1/4 cup olive oil
2 tablespoons sour cream
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
Easy cooking Green Noodle and Pimiento Salad dishes:
1. Cook the noodles according to packet directions, drain then rinse under cold running water. Drain again thoroughly.
2. Transfer the noodles to a large serving bowl, add the shallots, radishes, celery and pimientos. Toss. Add the lemon juice, oil, sour cream, basil, salt and pepper. Toss again and serve at room temperature.
Tips: You can vary this salad in a number of ways: 1. Omit the salt and add 2 chopped anchovy fillets. 2. Add 2 tablespoons drained capers and 1 tablespoon finely chopped parsley, and decrease the amount of salt to 1/4 teaspoon.
3. Add 1 can (185g) tuna, drained and broken into small chunks.
