Glutinous Rice Flour Cakes (Lapek Bugis) 

  • 250 ml (1 cup) thick coconut milk Pinch of salt
  • 250 g (2 cups) white glutinous rice flour
  • 125 g (1 cup) black glutinous rice flour
  • 2 large banana leaves, softened and cut into 18-cm (7-in) squares, for wrapping
  • 300 ml (1 1/4 cups) coconut cream
  • Toothpicks

Filling

  • 200 g (2 cups) freshly
  • grated coconut
  • 150 g (3/ 4 cup) sugar
  • 85 ml (1/ 3 cup) water
  • ½ teaspoon vanilla essence
  • Makes 20 cakes
