Easy Green Duck Curry (Gulai Hijau Itik) recipe when you need something on the table quick:
# 2 tablespoons freshly squeezed lime juice
# 1 fresh duck (about 2 kg/41/2 Ibs), cut into 12 to 14 pieces
# 2 tablespoons oil
# 1 liter (4 cups) water
# 5 kaffir lime leaves
# 1 or 2 turmeric leaves
# 2 stalks lemongrass, thick bottom part only, tough outer layers discarded, inner part bruised
# Spice Paste
# 2 teaspoons black peppercorns
# 8 candlenuts, crushed and dry-roasted
# 10 to 15 green chilies, sliced
# 4 shallots
# 5 cm (2 in) galangal root, peeled and sliced
# 2 ˝ cm (1 in) ginger, peeled and sliced
# 2 ˝ cm (1 in) turmeric, peeled and sliced
# 1 teaspoon salt
This easy Green Duck Curry (Gulai Hijau Itik) recipe is appropriate for any occasion:
* To make the Spice Paste, grind all the ingredients to a smooth paste in a mortar or blender, adding some water to keep the paste turning if necessary. Transfer to a bowl and set aside
* Rub the lime juice onto the duck pieces. Set aside for 15 minutes.
* Heat the oil in u wok over medium hat and 5tir-fry the Spice Paste until fragrant, 3 to 5 minutes, then add the water and bring to a boil, stirring constantly. Add the duck, lime leaves, turmeric leaves and lemongrass, and mix well. Simmer uncovered, turning the duck pieces frequently, until the duck is tender and the curry thickens. This should take about 1 hour. Remove from heat and serve with steamed rice.
