Quick and easy Spicy King Prawn (Udang Balado) recipe:
* 2 tablespoons freshly squeezed lime juice
* 1 teaspoon salt
* 750 g (1 1/2 lbs) fresh large prawns, peeled with tails intact and
* Oil for deep-frying
* 20 petai beans, halved lengthwise
* Seasoning
* 10 red chilies, sliced
* 5 shallots
* 1 medium tomato, deseeded
* 1 to 2 teaspoons sugar (optional)
* 1 teaspoon salt
A quick and simple Spicy King Prawn (Udang Balado) online recipe for all you health conscious foodies:
* To make the Seasoning, pulse all the ingredients in a mortar or blender several times to chop finely, but do not turn into a paste. Transfer to a bowl and set aside
* Rub the lime juice and salt onto the prawns. Set aside for 15 minutes, then drain the prawns and pat dry with paper towels.
* Heat the oil in a wok over high heat until very hot . Deep-fry the prawns, a handful at a time, until just cooked, about I minute each. Remove and drain on paper towels.
* Heat 3 tablespoons of the oil in a wok or skillet wer medium heat. Stir-fry the petai beans with the seasoning until fragrant and cooked, 4 to 5 minutes. Add the deep fried prawns and mix until well blended, taking care not to overcook the prawns. Remove and serve immediately
