This Spicy Beef Salad recipe is easy to put together:
Here is a way to turn leftover beef into another main course. Serve with corn on the cob or crusty bread.
1 tablespoon red wine vinegar
1 teaspoon French or German mustard
Pinch salt
Pinch black pepper
¼ cup olive or vegetable oil
1 tablespoon finely chopped parsley
1 teaspoon ground cumin 1 clove garlic, peeled and finely chopped
2 cups diced cooked beef
2 stalks celery, chopped
¼ cup finely chopped onion
2 medium-size green or red capsicums, cored, seeded, and chopped
Lettuce leaves for garnish

1. In a small serving bowl, combine the vinegar, mustard, salt, pepper, oil, parsley, cumin and garlic.
